Cooking Classes AT THE GREENBRIAR are provided seasonally.

During the fall of 2004, we offered a series of International Cooking Classes. We began on October 17, and every Wednesday thereafter, a class in French, German, Italian, Greek, Asian and South American Cuisine. The formats of these classes were: A demonstration of at least four dishes that comprise a full dinner, including appetizers, salad, or soup, entrée and dessert. Then the class sat down to a full dinner following the class. Free wine and/or beer samplings continued throughout the class and dinner, for a cost of $45.00 per class. You may sign up for one, or all of these classes, as you choose.

An additional feature of these classes included the option for dinner to be provided to a "guest" of the class attendee. Spouses and friend could attend the dinner after the class for a cost of $25.00 per guest! Wine is provided at no extra charge.

Guest chefs from our area, who are knowledgeable in each cuisine, were often included in these classes, with their culinary expertise shared. Questions were welcomed, and chefs were available throughout the class, and throughout dinner, for additional questions, and demonstrations of technique.

Recipes were provided for the entire meal presented.

Tiramisu

We can provide a menu from any of our regularly scheduled classes to your guests, at your home.

We can also provide a tailored menu that is designed to meet your own needs for culinary education.

In either case, we would be happy to provide this service to a minimum of 8 people. This includes set-up in your kitchen, demonstration and/or participation with your guests, service for dinner, and clean-up. Our guest chef will provide this service for $65.00 per person, which includes consultation, demonstration, and an additional staff member for set-up, service and clean up. (Not including tax and gratuity.)

Some topics for in-home classes that we have taught previously might be:

  • Savory Soup/Stocks: From one-course meals to elegant luncheon and dessert soups. It's "all in the stock". We'll teach you to have confidence and work creatively with food on hand. This is the basic course for all aspiring gourmet chefs, and a building block for all of European cuisine!

  • Sauce It Up!: From the simple to the sublime! We show you how to avoid spending a fortune on everything from cocktail sauce to chantilly sauce. Alfredo, Pesto, Sweet and sour, Hoisun; just to mention a few! It's mostly already in your cupboard! Professional chefs spend year learning but we get a lot done in a few hours…

  • Heart-healthy Cooking: (Low Fat Cooking) An art and a science! We offer hundreds of ideas for keeping your favorite dishes on the menu without the calories and the fat!

  • Do-Ahead Appetizers: This class offers many ideas for freeze-ahead hors d'oeuvres as well as lots of demos for same-day preparation... These ideas allow you to be a guest at your own party!

  • Garnishes: The Chinese mastered this art 5000 years ago! Much of what we know is based on their culinary art. It migrated to Europe and is now being emphasized in Western cooking. Learn the basic tools of the trade and have fun with edible and non-edible flowers, as well as vegetable accents. This course is more like an art course, with additional hands-on opportunities, and sampling.

  • Cooking With Herbs: There are already good things in the garden! Fresh perennial herbs and greens provide a full menu of pestos: (with some unusual herbs), sauces, vinaigrettes, fresh purees and spring stir-fry's. We provide help with spring planting ideas.

  • Vegetarian Cooking: When you look at the vegetable counter do you feel inspired or mystified? Learn how to create healthy, interesting and delicious vegetarian meals that are satisfying.

  • English High Teas: This is definitely an experience more than a demonstration. There will be a lot of discussion of the High Tea, many recipes provided, and lots of (small) food. Come prepared to sit down and be served. That is the experience of a high tea.

  • Specialty Desserts: Get ready to "Wow" your party with some of these spectacular dessert confections! We stress miniature desserts for dessert trays. Also European Tortes and Tarts. How are Sacher tortes and Tiramisu made? How do those pastry chefs garnish a dab of ice cream and make it look like a work of art? We sample the best of the best!

  • Gifts from the Kitchen: These gifts look and taste like a specialty gift catalog would offer. We demonstrate many gift packaging ideas, and you will have four gifts and many recipes to take home at the end of the class. Prepare to let your hair down, while sampling wine, and be a kid!

  • French Pastries: Appetizers to Dessert: You will be shown appetizers, entrees, and desserts using classic pastry methods. This is dinner, complete with Caesar salad! This is the best from French Cuisine. Very impressive!

  • Cooking with Kids: This is for parents and children! From after school snacks to dinner menus, we'll show you and your child how easy it is for them to work in the kitchen and prepare something for themselves or their family. This is appropriate for 5th through 8th grade.
